1 cup of oat flour
3/4 cup of old-fashioned rolled oats
½ teaspoon of baking powder
1/3 teaspoon of baking soda
1/2 teaspoon of salt
2 cups of raw sugar
1/3 cup of canola oil
1/3 cup plain of soy milk
1/2 teaspoon of vanilla extract
½ ripe banana, cut into small pieces
1/4 cup of chopped walnuts or other favorite nut
1/3 cup of semisweet vegan chocolate chips

How to do it:
-Preheat oven to 350 degrees.
-Combine oat flour, rolled oats, baking powder, baking soda, salt and sugar in a bowl.
-In a separate bowl, whisk oil, soy milk, and vanilla.
-Add together mixtures of the two bowls.
-Fold in chocolate chips, walnuts and banana,=
-Put parchment paper on a baking sheet.
-Scoop dough into the pan
-Bake for about 25 minutes and let it cool before serving.

1 / 16.5-ounce package of refrigerated sugar cookie dough
1/4 cup of packed light brown sugar
1/4 cup of finely chopped pecans
3/4 teaspoon of ground cinnamon

How to do it:
-Preheat oven to 350 degrees
-Position rack into the center of the oven
-Freeze the sugar cookie dough for one hour
-Remove it from freezer after and place on cutting board
-Cut the dough into ¼ inch slices, making about 28-32 slices, arrange it two inches apart on two parchment paper lined baking sheets
-Combine cinnamon, chopped pecans, ground nutmeg and brown sugar in a bowl
-Top the cookies with ¾ teaspoon of streusel
-Bake it for 12 minutes, until the edges are crisp and brown
-Let the cookies cool on baking sheets for 3 minutes and remove to the rack
