Soda Cakes

This weekend I baked for our work fundraiser.  I didn't know how I would do everything since we have been busy.  So, I thought I would improvise and be a food scientist.

I guess you could say I cheated on this recipe as I did not do everything from scratch.  I used boxed cake mix (white), and then substituted the water for flavored soda.  And guess what?  It worked!  The cupcakes rose really high and stayed that way.  I thought maybe it would crash.  I did make some with out the soda and it was not very high.

Taste?  Well believe it or not it was really taste and not sweet or overwhelming at all.  The cake tasted pretty good and was moist. 

Overall, I think this is something I will continue to do.  Let's just call this being efficient at making tons of cupcakes.  Believe it or not, I made 6 dozen cupcakes.  Crazy!
