Sucrase: the sugar sucrose (Sucrase enzymes catalyst the hydrolysis of sucrose to fructose and glucose)

Sucrase : Sucrase works in conjunction with amylase, taking the product of the amylase reaction and further breaking down the carbohydrates into simple sugars. Sucrase specifically targets sucrose. It can be round in many raw green plants, and especially cucumber. Potatoes are also good sources of sucrase, as is sugar cane.
It is a disaccharide made from the simple sugars glucose and fructose. If sucrase wasn't as it is now their would be an imbalance in the reaction.
Stable around 100ºc and the pH is 4.5
