Sweet Poppy Seed Dressing
This is especially good on a Kale salad
Sauté shallots in a bit of butter or oil until soft, let cool. In a small bowl pour in olive oil and coconut oil. If coconut oil is hard, microwave it to get it to liquid. Mix in honey, then vinegar, and add shallots. Combine well. Add water to desired consistency.
- 2-3 tablespoons poppy seeds
1 1/2 tablespoon apple cider vinegar
3 tablespoons shallot or red onion chopped fine and caramelized
1 1/2 tablespoon agave or honey
1 1/2 tablespoon extra virgin olive oil
1 tablespoon coconut oil (unrefined)
water 1-2 tablespoons
sea salt to taste
