Step One: Get pork belly from a local farmer or butcher. You very well may have to pre-order it. Just start with a pound for your first try.
Step Two: Brine it. Create a brine that uses the ratio of 2.5 teaspoons of salt to 1 lb of pork belly. Then a bunch of seasonings based on what you like.
