Curry Chicken

4o minutes prep & cooking


3 chicken breast

2 Tbsp thai red curry paste

2 tsp minced garlic

1 can lite coconut milk

1/2 cup chopped red onion

4 chopped green onions

1 1/2 tsp black pepper

1 Tbsp raw sugar

2 tsp soy sause

1/2 tsp red pepper flakes

toasted sesame seeds

1/2 tsp ginger paste or fresh

2 tsp olive oil

2 Tbsp corn starch

cold water

Slice chicken into strips about 1/2 inch thick set aside. In a non stick skillet add olive oil. When the oil is hot add chicken then cook about 5 minutes. Then add both onions , curry spice , garlic , black pepper and ginger and red pepper flakes . Stir often.When chicken is no longer pink add coconut milk , soy sauce , raw sugar then let simmer about 15 minutes . In a cup add corn starch and enough water untill it thins it out . Then add to chicken mixture , keep stiring until it thickens. Serve over white rice and sprinkle sesame seeds on top.
