Chicken Jambalaya


  • 1 lb Kielbasa Sausage
  • 1 lb boneless, skinless chicken thighs
  • 1 can stewed tomatoes
  • 4 celery stalks
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 cup uncooked rice
  • 1 cup water
  • 1/2 cup flour
  • 4 tbsp vegetable oil
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp curry powder
  • 1/2 tsp cayenne pepper
  • Minced garlic cloves (to taste, optional)
  • Thyme (to taste, optional)

First, Cut up the chicken into 1 inch pieces, throw in a bowl and coat with flour. Use 2 tbsp of vegetable oil and brown the chicken, discard excess flour.

Next, dice the celery stalks, green pepper, and onion and sauteed them with the can of stewed tomatoes, uncooked rice, black pepper, paprika, curry powder, cayenne pepper, garlic cloves, and thyme in the other 2 tbsp of vegetable oil.

Next, slice the kielbasa sausage into 1/4 inch slices.

Lastly, mix everything together with 1 cup of water in a baking pan large enough to hold all of the ingredients, and bake covered for one hour at 350 degrees F.
