Cilantro-Peanut Pesto Pasta

A change from the usual pesto


  • 1 bunch of cilantro
  • 1 clove of garlic
  • 3/4-inch slice of ginger
  • 2 tbsp of vegetable oil
  • 1 tbsp of sesame oil
  • 1/2 tsp of red pepper flakes
  • 1/2 teaspoon of grated lime zest
  • 2 tsp of lime juice
  • 1/4 cup of roasted peanuts
  • 1 tsp of brown sugar
  • 3 tbsp of soy sauce
  • 3/4 lb of cooked thin spaghetti (or the pasto of your choice)


First, combine the cilantro, garlic, ginger, vegetable oil, sesame oil, red pepper flake, lime zest, lime juice, brown sugar and 1/4 cup of peanuts in a food processor.

Pulse the food processor until a grainy paste forms. Once the grainy paste forms, add soy sauce and pulse until the soy sauce has blended into the paste. This paste is the cilantro-peanut pesto!

Toss the cooked pasta with the pesto and garnish the top with some crushed peanuts and cilantro leaves.
