Pixel Press Floors (Free)
Pixel Press Floors makes students plan out what a video game level should look like.  This is a big file, and no doubt takes a lot of time and planning, but students love it.  They design their level on paper, then scan it with an iPad.  From there they design the level by choosing colors, coins, etc.

Do Ink Animation ($4.99)
Have students that like to draw?  This app makes it easy to draw an object and then make another frame right on top of it.  By tracing and slightly changing the object, over time you see a flip book (or gif) effect.  This can be done as a simple animation, or can be planned out for a whole story.  The sky is the limit here, and it's extremely easy to use.  This can also be used in conjunction with Do Ink's Green Screen App ($2.99).
