Lemon Bars

Prep time 15 mins & cook time 1 hr

Ingredients

1 1/2 stick butter (chilled)

4 eggs

4 egg yolks

2 cups flour  plus 1/3 cup

1/4 cup brown sugar

1/ 2 powder sugar

1 cup lemon juice

2  cups sugar plus 2 Tbsps

1 tsp vanilla

4 egg whites

3 TBSPS vegetable oil

Crust :  pre heat oven at 350

In a food processor add 2 cups flour , butter , powder sugar , brown sugar . Pulse until it forms into a ball . Line a 9×14 pan with foil . Make sure theres no gaps then rub oil on foil . Then evenly press crust in pan . Bake for 25 mins . While the cust is baking make the filling .

Filling :

In blender add eggs , yolks , sugar , 1/3 cup flour , lemon juice mix until smooth . Pour this on hot crust and drop temperature to 300 . Bake for 30 mintues.   When the bars are almost done start on the topping.

Topping :

In a large bowl add egg whites beat them until they start getting  foamy then add vanilla and 2 Tbsps sugar continue to beat until it starts to peak . Then spread on top of bars then put back in oven until golden brown . Let them set for 20 mintues . Put in refrigerator for 2 hrs before cutting.
