Luxury Macaroni and Cheese
and it's Healthy too!


12oz/340g dried macaroni
4oz/113g low fat cheese
1 tsp dried red chilli flakes
9oz/255g quark
2 egg yolks lightly beaten
Grated Courgettes
Cherry Tomatoes
Broccoli Florets
Diced Carrot  
(vegetables to taste - add or subtract, it's up to you!)
salt & pepper

Preheat oven to 200 degrees.

Boil macaroni in a pan according to the instructions on the packet.

Meanwhile mix together the low fat cheese, chilli flakes, quark, vegetables & eggs in a large bowl and season well.

Add the pasta & toss to coat evenly.

Put the pasta in an ovenproof dish and bake for 15-20 mins or until lightly browned on top.

Remove from oven and serve - enjoy.
