Mini Cheddar Scones

One bite of these scones will convince you that good things really do come in small packages!

  • 2 3/4 cups all-purpose flour
  • 2 T. sugar
  • 2 t. baking powder
  • 1 t. table salt
  • 1/4 t. baking soda
  • 10 T. unsalted butter, cold, cubed
  • 1 cup Cheddar shredded
  • 1/3 cup minced fresh chives
  • 1 cup buttermilk
  • 2 T. water
  • 1 egg blended with 1 T, water

Preheat oven to 375 degress; line a baking sheet with parchment paper. Combine dry ingredients in a large bowl. Cut in butter with pastry blender or fork till pea sized.Stir in cheddar and chives, then add buttermilk and 2 T. water, knee the dough gently until blended. Turn out dough onto floured surface and pat into 8" squares. Cut into 2" square, then into triangles. Arrange scones on baking sheet, spacing 1" apart. Brush tops with egg-water mixture and bake until golden, about 25 minutes.
