Jalapeño Popper Grilled Cheese

The best sandwich for the Jalapeno Popper Lover

  • 2 jalapeño peppers, cut in half lengthwise and seeded
  • 2 slices of sourdough bread
  • 1 tbsp of butter, softened
  • 1 tbsp cream cheese, softened
  • 1/4 cup jack and cheedar cheese, shredded

First, broil the peppers for about 8-14 minutes on the top rack until the peppers are blackened. Place in ziplock bag and let sit for 10-20 minutes, this will soften up the peppers and let the skin peel off easier.

After you peel off the skin (should just come right off), butter the bread on both sides of both slices, spread the cream cheese on one slice of the bread, lay the peppers in one layer on top of the cream cheese, and then layer the shredded cheese in an even layer over the peppers.

Put the second slice of bread on top and pan-fry the sandwich on each side for about 3 minutes on medium-low heat on each side, or until golden brown on each side.

Cut diagonally and serve!
