When working to prevent food borne illness, it’s important to recognize that some food items are more likely than others to become unsafe. Those items are known as TCS food. TCS foods are foods that require time and temperature control for safety. These foods have been referred to as “potentially hazardous foods,” because they can support the rapid growth of microorganisms. They must be stored according to specific TCS guidelines stated on food packaging, or they will spoil before being prepared.

*Some of the TCS Foods consists of eggs, poultry, dairy products, milk, shellfish, sliced melons, cut leafy greens, sprouts, soy products, potatoes, rice, tomatos, and also garlic and oil mixtures.

TCS foods are usually:

  • High in protein
  • Moist
  • Moderately to slightly acidic
