Pumpkin Pie Spice
Make your own pumpkin pie spice at home.
One of the easiest things you can do at home in the fall is mix your own pumpkin pie spice! The ratio is always the same 2:1 (cinnamon to everything else) then a dash of allspice to round out the flavor. I use this pumpkin pie spice for far more than pies as well. It works great to season homemade granola or applesauce! You can add it to pancake or waffle batter, put it in your coffee, or add a dash to some rich hot chocolate. If you like pumpkin pie then this will go fast! The recipe that follows fits into an empty spice container that you might have lying around but will be finished before you know it. If you want a bigger batch, or have a bigger container to put it in (or even a ziploc bag) then feel free to double or triple this recipe. When I am in the fall cooking mood I make a batch with tablespoon measurements instead of teaspoon and that lasts me through most of my baking.
Put all of the ingredients into a bowl and mix to combine them completely. Transfer them to a container or use it right away to bake. If you really want your cookies, cakes and baked goods to taste like pumpkin, substitute part of the wet ingredients for some actual pureed pumpkin and a teaspoon or so of this spice!
