A.K.A Maple Mustard Chicken
- 1.5 lb chicken thighs (boneless)
- 1/2 cup dijon mustard
- 1/4 cup maple syrup
- 1 tbsp rice vinegar (rice wine vinegar also works)
- salt and pepper to taste
- Fresh rosemary
First, preheat oven to 450F.
The proceed to mix the dijon mustard, maple syrup, and rice (rice wine) vinegar together.
Lay the chicken thighs in a greased and/or foil lined pan.
Salt and pepper the chicken to taste.
Pour the maple and mustard mixture over the chicken, making sure to coat all of the chicken, turning the chicken if necessary.
Bake in the oven uncovered at 450F for about 40 minutes. Make sure the meat thermometer reads 165F or higher internally for the chicken to be cooked through.
Also, baste the top of the chicken halfway through so the chicken does not dry out.
Let rest for 5 minutes before serving, serve with rice and some fresh rosemary on top.
