Easy, Healthy Home Cooked Salad
This is a truly simple meal that is oh so wholesome and delicious!
1 large bunch of chopped Broccolli leaves (or Kale or any other dark leafy green)
1/2 cup of chopped red cabbage
1/2 cup of peeled carrot, radish, and beets (or any other colorful root veggie)
1 Tablespoon of honey mustard
1 Table spoon of apple cider vinegar
1 Tablespoon of honey
3 Tablespoons of olive oil
1/2 Tablespoon of fennel seeds
Salt and pepper to taste
Prep, Cook & Serve:
- Chop Broccolli leaves. Chop red cabbage. Peel carrot, radish, and beets.
- Mix honey mustard, apple cider vinegar, honey, olive oil, fennel seeds, salt and pepper in a bowl.
- Mix all ingredients and steam everything together in a large covered pan for 15-20 mins. Top with Goat cheese. Enjoy!
