Peppermint Mocha Latte

Hello December! It's the most wonderful time of the year, and who doesn't love a good holiday latte during the jolly good festive season? Peppermint is the flavor of the month, and that Starbucks Peppermint Latte is delish. It's also almost 10% of the caloric intake in a 2,000 calorie diet! Holy hippo hips, Batman!

And that's WITHOUT the whip! Add 70 calories and 7 more grams of fat for the whip, thank you very much. So I guess that means no Peppermint Mocha Latte! Not to worry, I came across this hip saving recipe that was whipped up by nutritionists and posted by Rebecca Swanner on the Team Beachbody Blog site.

Yield: 1 serving

½ cup nonfat milk (or unsweetened almond milk)
2 Tbsp. unsweetened cocoa powder
½ tsp. raw honey (optional)
¼ tsp. pure peppermint extract
1 cup brewed black coffee (or 1 shot espresso)
1 fresh mint leaf (for garnish; optional)

1. Bring milk, cocoa powder, and honey (if desired), and peppermint extract to a boil in medium saucepan over medium heat, stirring occasionally.
2. Remove from heat; mix vigorously with a whisk until frothy.
3. Pour coffee into a large serving mug; top with milk mixture.
4. Garnish with mint leaf if desired.

*Vegan? No problem! To enjoy it vegan, swap almond milk for nonfat milk and leave out the honey.
