Soft and cinnamon-y
- 1 cup unsalted butter
- 1 1/2 cup sugar & 3 tbsp on the side
- 2 large eggs
- 2 3/4 cups flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/4 tsp salt
- 3 tsp cinnamon
First, blend the butter, 1 1/2 cup of sugar, and eggs in a large bowl.
In a separate bowl, mix flour, cream of tartar, baking soda, and salt thoroughly.
Now, blend the 2nd bowl (dry mixture) into the first bowl.
Next, place the bowl in your fridge for about 10 minutes.
At the same time, mix the 3 tbsp of sugar and the cinnamon together in a small bowl.
Once the dough has chilled, form 1 inch (diameter) balls with the dough and roll it in the sugar cinnamon mixture to coat the balls with the mixture evenly (see picture below).
Lastly, place the balls on a ungreased cookie sheet about 1 1/2 inch apart and bake at 350F for 10 minutes! Remember to take it off the cookie sheet immediately as soon as it's out of the oven to prevent overbaking!
