Not for Thanksgiving, but afterwords there are always so many leftovers. Solution? Leftover Thanksgiving Pizza. Literally just take all of your leftovers (Turkey, gravy, mashed potatoes-topped with cheese, cranberry sauce, stuffing etc.) and throw if on some already baked pizza dough. Bake it in the over for 8-10 minutes or until golden brown and voila!

Growing up with a family of vegetarians, we have always had unusual Thanksgiving dishes (but luckily still always had turkey). My mom always makes mashed cauliflower, although unusual, a very tasty dish.

Ingredients: 1 cauliflower head, 1 table spoon olive oil, salt and pepper.

Directions:
-Bring a large pot of salted water to a boil.
-Add cauliflower and cook for 10 mins or until tender.
-Save 1/4 cup of the cooking liquid and then drain well and transfer cauliflower to a food processor (or bowl to mash up)
-Add oil and saved water, 1 tablespoon at a time, and purée until smooth. (Or, mash cauliflower with a potato masher).
-Season with salt and pepper and serve.
