prevention:exclude workers , wash hands, cook food to minimum internal temps.

Shigella spp.

food: salads containing TCS food(potato, tuna , shrimp , macaroni, chicken) produce

prevent by excluding food handlers , wash hands control flies

Nontyphoidal salmonella

commonly linked food: poultry and eggs , dairy products , produce

prevention: prevent cross contamination

described: it feels like the flu because of upset stomach with vomitting and high fever and diarrhea
