Polish Christmas traditions are very different from America. There are many different polish traditions one being that they believe if they have a clean home inside and out then there home would be clean through out the whole next year. They believe that everything that happens on christmas is how it will be the whole next year. A white snow on christmas is there only real considered christmas to the polish. There are many other traditions that they follow like for farmers, unmarried women, and there christmas eve supper.
Dill Pickle Soup:
2cups of chicken broth
2 chicken bullion cubes
3 medium carrots coarsely grated
1/4 of fresh cauliflower
1 cup of fresh green beans
1 cup of peeled and cubed potatoes or 1/2 cup of raw rice
1 cup of thinly sliced celery
5 polish dill pickles coarsely grated (from the jar)
½ cup of milk
1 tablespoons flour
5 tablespoons of sour cream
salt and pepper
1/2 teaspoon of fresh parsley finely chopped (optional)
1/2 teaspoon fresh dill finely chopped (optional)
o For the dough:
o 3-1/2 cups all-purpose flour, plus more for dusting
o 3 large eggs
o 2 tablespoons sour cream
o 3/4 to 1 cup water
o For the filling:
o 1-1/2 lbs baking potatoes, peeled and cut into 1-inch slices
o 2 tablespoons unsalted butter
o 1 tablespoon extra-virgin olive oil
o 1 small sweet onion, chopped
o 1 clove garlic, minced
o 1/4 teaspoon dried thyme
o 3/4 to 1 cup grated dry farmer's cheese
o Kosher salt and freshly ground pepper to taste
o For the finished dish:
o 1/2 stick butter, cut into 1 tablespoon portions

The polish celebrate Christmas and Santa Claus day 3 weeks apart. Santa Claus day is the day when Santa leaves gifts under the tree but they also believe that on the night of christmas eve Santa comes again to leave more present. Santa Claus day is celebrated on the December 6th. Gifts are believed to be from an Angle or Starman.
