How to Make a Pie
Basic Patte Brisse` and Apple Crumb Pie

Although what at first seems daunting it is actually very easy to make a pie. First one needs a good basic pie crust recipe, a food processor and their favorite pie filling recipe.

Basic Pie Crust recipe (From Martha Stewart Pies and Tarts makes 2 8 inch pie shells)

In a food processor add 2 1/2 cups all purpose flour, 1 teaspoon salt, and 1 teaspoon sugar. Pulse to combine then add 2 sticks of diced unsalted butter and pulse 11 times then add 1/4 to 1/2 cup ice water and combine until forms a ball of dough. Split into two flat discs, wrap with plastic wrap and refrigerate for 1/2 hour. Roll out, place into pie pan, flute and fill with favorite pie filling...I prefer a apple crump pie.


Apple Crumb Pie (from Mennonite Community Cookbook

Peel and slice 6 baking apples of your choice. Mix 1/2 cup sugar and1/2 tsp. of each cinnamon and nutmeg and sprinkle over apples toss with a spoon and add to pie shell. Top with crumbs made by mixing 1/2 cup sugar, 5 tbsp. diced butter and 3/4 cup flour, rub into crumbs and sprinkle on top of pie. Flute pie edge.  Bake 425 for 10 minutes and reduce heat to 350 and bake 35 minutes longer.
